Maltitol powder is a sugar alcohol manufactured through hydrogenation of maltose from starch, available as white crystalline powder with a sweet taste.
Maltitol powder is 85-95% as sweet as sucrose. It is with heat resistance, acid resistance, moisture retention and non-fermented features. Basically Maltitol powder does not have Maillard reaction. It can be not absorbed during digesting. It has low calorie, about 5% that of sucrose.
Application:
With its properties, like good hygroscopicity; low calorie; resistant to mould, yeast and lactobacillus, etc. Maltitol is widely used in:
1 Functional foods, like sugar free foods, diabetic foods;
2 Confectionary and chocolate.
3 Juice
4 Cakes, with its good hygroscopicity, it is used in cakes to keep the taste and no crystalline.
5 Children's food, no decay on tooth.
